How can Christianity be the truth if one of the main contributors of the NT couldn't get his stories straight?

and what about how the new testament contradicts the old testament. like taking back the dietary laws. maybe it's just me, but god doesn't really seem like the type to just be like "oh nevermind, i take it back."
